Mex City Hotspot Revives Market Cuisine, Opens June

Set to debut in mid-June 2007 at the Marquis Reforma hotel, this onyx and marble oasis will offer a new standard of upscale dining comfort and sophisticated big-city ambiance. As surely as canaries sing, so, too, is the buzz building. Set to debut in mid-June 2007 at the Marquis Reforma hotel, this onyx and marble oasis will offer a new standard of upscale dining comfort and sophisticated big-city ambiance. Reviving the concept of "Cocina de Mercado," Spanish-Mexican cuisine is inspired by what is fresh in the day's market. Los Canarios will open on the lobby floor of Marquis Reforma, a 209-room luxury boutique hotel and member of Leading Hotels of the World. Designed by noted Mexico City architect Roy Azar, principal of Roy Azar Arquitectos, the restaurant's irresistible vibe is all about harmony thriving amid special details.

The surroundings are as beautiful as the people who will want to gather here. The after-hours cocktail crowd will gravitate to the white onyx stone bar, which blends seamlessly with the ivory white marble floor, while enjoying delectable appetizers and a nonstop flow of spirits.

Light, Nature and the Sound of Canaries Work Together
The bar space is an elevated wonder overlooking the new Los Canarios Restaurant, a 3,800 square foot testament to gastronomy. Los Canarios, the restaurant's name, derives from its signature design element: live canaries singing in gilded cages in the rich, casually elegant dining room, where diners will enjoy a natural haven away from the city's hustle and bustle.

The interior combines pristine ivory marble floors with rich cherry wood walls. Large curved windows and skylights conspire to bring the outdoors in with natural light and expansive views, while orange trees in oversized planters and lush green plants hanging from interior beams fill the space. Wooden columns divide the dining area, creating privacy and intimacy. The elegant color palette speaks of rich browns, earthy oranges and glossy whites. Black wooden chairs with soft white cushions surround refined white-clothed tables.

"I create spaces where the foyer, the corridor, the arcs and the columns all speak the same language,'' said Azar, who is currently designing projects for Starwood Hotels & Resorts, as well as luxury residences in Mexico City. "The marble must complement the lighting and everything in between." He continued, "In this space, light, nature and the sound of the canaries all work together to create a relaxed, lively atmosphere," Azar concluded.

At the head of the kitchen, sit the winning combination of Ignacio Gutierrez and Max Covaliu Kaufmann ensuring nationally grown produce and fresh homegrown foods. Chef Gutierrez is the Executive Chef of all Marquis Reforma restaurants including La Jolla and Bar Caviar. Chef Kaufmann is the Executive Chef of the Los Canarios Group including two outposts in the Santa Fe and Polanco areas of the capital city. Located on elegant Paseo de la Reforma, Los Canarios shares the Marquis Reforma's tony address with a striking Art Deco exterior, attracting well-heeled and well-traveled patrons..

Flavors and Aromas of Classic Mexican Kitchens
With a spotlight on seafood, Los Canarios will revive the flavors and aromas of classic Mexican kitchens from the turn of the 19th Century. Freshness is the hallmark, from seasonal vegetables and fruits, to just-caught fish, to the highest-quality cuts of meats. No freezer stored food here; refrigerators will be emptied and filled almost daily. Look for traditional Mexican fare, such as Tacos de Camaron (Shrimp Tacos) and Mediterranean Spanish, such as Paella Valenciana (Valencian Paella). Seasonal specialties will be featured, such as Gusanos de Maguey (red and white edible caterpillars found in Oaxaca and Central Mexico); Chiles en Nogada (poblano chiles with picadillo, walnut cream sauce and pomegranate seeds, resembling the three colors of the Mexican flag - red, green and white); and Romeritos con Tortitas de Camaron (Mexican plant resembling rosemary with dried shrimp patties and potatoes with mole sauce).
